In this post, I’ll show you a simple and quick recipe for spaghetti napoli with simple ingredients.
Spaghetti Napoli is one of the classics of Italian pasta cuisine. This pasta variant is super easy to prepare in a short time and tastes good for the whole family. Some people know this dish simply by the term “pasta with tomato sauce”, but of course, fans of Italian cuisine would never call this dish that.
You only need a few ingredients for these simple spaghetti napoli. First and foremost, of course, you should have delicious spaghetti in your shopping basket, as well as strained or chopped tomatoes (depending on your preference). For the taste, I also recommend a fresh onion, fresh basil, a little sugar and parmesan.
If you like this dish, then you will definitely like my tortellini al pomodore, which are similar in principle and are served with delicious buffalo mozzarella.

It’s time for pasta classics again! Today a tortellini al pomodore with tender mini buffalo mozzarella. What exactly is Pomodore? A fruity, cooked-down tomato sauce with just a few ingredients. More precisely, you only need onions, garlic, tomatoes, some sugar and Italian herbs for this sauce. This is all boiled down together and then combined with the pasta. Authentically Italian and simply delicious. Refined with tender buffalo mozzarella that melts on the hot pasta, this dish is a true soul food.

Nutritional information per serving of Tortellini al Pomodore
Step 1 Cut the onion and garlic into fine cubes and sauté in a little olive oil at medium temperature until translucent. Then stir in tomato paste and cane sugar and let fry briefly.
Step 2 Add the tomatoes and stir everything together. Roughly chop the basil and stir in. Then simmer everything stirring for 20 minutes.
Step 3 Meanwhile cook the tortellini in salted water.
Step 4 Stir the sauce again and again and season with salt, pepper and Italian herbs (thyme, oregano, basil).
Step 5 Finally serve with mini buffalo mozzarella. Tip: If you like, you can put the finished plate in the microwave again for 30 seconds so that the mozzarella melts.

]]>In this article, I’ll show you a quick and easy variant of a fiery pasta al arrabbiata with rigatoni and fresh basil. The heat content of this dish can of course be adjusted as you wish.
Pasta al Arrabbiata is the ultimate classic when it comes to Italian food. The special thing about this pasta is the fiery tomato sauce, which is heated with plenty of chili. Traditionally, this pasta is often served with penne, but for reasons of beauty I opted for rigatoni because I like the coarse pasta better. You can of course use any other type of pasta of your choice for your al arrabbiata.
As already mentioned, the arrabbiata is spicier than a normal tomato sauce. This is achieved in my recipe by adding a fresh chilli pepper. If you like it even more fiery, you can of course also add dried chilli flakes. However, I like the Arrabbiata a little milder, so one chili was enough for me.

Step 1Cook the pasta in salted water until al dente. Meanwhile, finely chop the onion and chili and sauté in a little olive oil in a deep pan. Stir in the tomato paste and fry briefly
Step 2Stir in the chopped tomatoes. Season everything with salt, pepper and a little sweetness. Add the pasta directly from the water into the sauce and mix everything. Stir with fresh basil and let stand briefly.
Step 3Serve the pasta with grated Parmesan and basil.

]]>When it has to go quickly, I like to grab fresh pasta from the refrigerated shelf. I particularly like to use the fresh tortellini, which are deliciously filled in different variations. In this post I will show you how you can put simple cheese tortellini in the limelight and turn them into a great after-work kitchen with a creamy tomato sauce.
I used to – forgive me – just ate cheese tortellini with tomato ketchup, especially when it had to be particularly quick! The cheese tortellini were simply immersed in boiling water for 3-4 minutes and could then be consumed immediately with a dollop of tomato ketchup. Now I’ve decided to give my simple after-work meal a little more class and serve the cheese tortellini in a creamy tomato sauce.
Much more time is not needed here than with the ketchup variant if you work with simple ingredients. I just use a can of chunky tomatoes, some tomato paste, an onion, some cream cheese, salt and pepper and some sugar. The cheese tortellini are then refined with some fresh basil and parmesan. This delicious dish is ready in just 15 minutes.

Step 1Finely chop the onion and fry in a deep pan in a little oil. Mix with tomato paste and fry briefly. Then deglaze with chopped tomatoes and stir in cream cheese.
Step 2Let the sauce simmer gently for about 10 minutes. Add the tortellini and let it cook. Season with salt, pepper and oregano. Add a little sweetness and season to taste.
Step 3Finely chop a sprig of basil and stir into the sauce. Optionally serve with Parmesan cheese.
