In December, so many kitchens are full of people kneading dough, cutting Christmas shapes and decorating cookies. Cinnamon stars belong on my baking list every year. The cinnamon, gentle almond flavour and white icing make them especially festive.

Make the dough and cut the stars
Mix ground almonds, egg whites, icing sugar and cinnamon, then knead in the almond milk until the dough holds together. Roll it out about 1 cm thick on a work surface dusted with icing sugar. Dip the star cutter in icing sugar as you work so the dough releases more easily.
Add the white icing
Beat the remaining egg white until stiff, incorporating the icing sugar for the glaze. Arrange the stars on a lined baking tray and brush the tops with the icing so they are completely covered.
Bake gently
Bake at 160°C conventional heat for around 10–15 minutes. Keep an eye on the icing: it should set while staying white. If the cookies bake too long, the tops will start to colour. For another Christmas baking project, try the strawberry jam sandwich cookies.
