Baked Apples with Almonds, Cranberries and Marzipan

The smell of baked apples belongs to Advent. This simple winter dessert uses large, tart apples such as Boskoop, hollowed out and filled with almonds, cranberries and marzipan.

Hollow out the apples

The more flesh you remove, the more the filling will dominate. I take out about a third of the inside, keeping enough apple around the filling. Cut a lid off each apple, remove the core with a spoon and rub the cut surfaces with lemon juice.

Prepare the filling

Marinate the cranberries in lemon juice and cinnamon. Cut the marzipan into small pieces or flatten it into little layers. Fill the apples with alternating layers of marzipan, cranberries and slivered almonds.

Bake and serve

Pour the orange juice into an ovenproof dish, stand the apples in it and replace their lids. Bake at 160°C fan for about 20 minutes, until tender and the skin begins to split. If you like, serve with vanilla sauce or ice cream. These optional accompaniments are separate from the recipe quantities.
