In this post I will show you how you can prepare a simple and delicious falafel wrap super quickly. A great recipe for the quick after-work kitchen or as a meal prep.

Do you sometimes feel like having quick and light dishes after work or as meal prep for lunch? Then you’ve come to the right place with this recipe for my falafel wrap.

From just a few ingredients from the supermarket, you can conjure up a delicious wrap that tastes super fresh and is filling. Together with bulgur, fresh vegetables and a refreshing yogurt dressing, you combine all the nutrients that your body needs to perform at its best. Whether before exercise, during lunch break or as dinner, this wrap is perfect for any time. And if you can’t resist it, you can simply plaster it in between.

Orient Wrap with Falafel

Ingredients
  • 2 tortilla wraps
  • 200g falafel
  • 60g bulgur
  • 1 handful baby spinach
  • 20g pomegranate seeds
  • 1/2 cucumber
  • a handful cocktail tomatoes
  • 3-4 tbsp hummus
  • For the dressing:
  • 100g yogurt
  • 1/2 lemon
  • 1 clove garlic
  • salt, pepper.
Directions
  • Step 1 Pour hot water and a little salt over the bulgur and let it swell for about 10 minutes. Meanwhile, chop the cucumber and tomatoes, wash the spinach and set aside. For the dressing, mix yogurt with the juice of half a lemon. Finely chop and stir in one clove of garlic and season everything with salt and pepper.
  • Step 2 Heat the tortillas briefly either in the oven or in a pan. Then spread the center with hummus and top with the swollen bulgur, cucumbers, tomatoes, spinach, falafel and pomegranate seeds as desired. Lastly, drizzle the dressing over the filling
  • Step 3 Then fold the sides of the wrap over and gently roll the wrap up. Serve with pomegranate seeds, spinach and dressing.
